Sorting

Every leaf is judged by stalk position, colour and texture. What doesn't fit goes back.

Stripping

The midrib is removed without haste. So the leaf can show its character.

Refinement

Mountain spring water from the Alpstein brings the leaf back into balance.

Quality control

Smell. Touch. Burn. Four eyes. Sometimes six. We don't release anything we wouldn't pass on with pride ourselves.
